CHAMBOLLE-MUSIGNY
Les Borniques
2018
- Description of the appellation
Chambolle takes its name from the bubbling aspect of the "Grône" stream after a storm. It was in 1878 that the name of the village was added to the name of its best Cru Musigny. This AOC exists only for red wines and has a total area of 182 hectares.
With Musigny Grand Cru to the south and Amoureuses to the east, the precious and refined expression of the Borniques terroir is matched only by that of its famous neighbors.
- Geological profile
Our plot is located downhill from the Grand Cru Bonnes-Mares. The vines are practically planted on the rock, on rocky soils composed of marls. The soil composition is precisely the same as that of the northern part of Musigny, very mineral! The dominant limestone mother rock in this vineyard is quite fissured.
- Vinification & Aging
Bio-lunar… At each stage, all our work follows the rythm of the Moon’s synodic revolution… And we are fully committed to the principles of organic farming in the management of our vines.
The winemaking process involves aging the wines in a combination of oak barrels and concrete or stainless-steel tanks.
- Food & Wine Pairing
This wine will pair well with a veal daube or a beef bourguignon.
