- Description of the appellation
In 1847, by the royal ordinance of Louis Philippe, the term Chambertin was associated with Gevrey to officially become Gevrey-Chambertin. The most famous premier crus of Gevrey-Chambertin cover "la Côte Saint-Jacques", as this slope was called in the 19th century. The Lavaut-Saint-Jacques climate is located west of the village of Gevrey-Chambertin, along the road that enters the Mountain to lead to the Combe de Lavaut. Its origin would come from "Val", which in the Middle Ages seemed to designate a relief.
- Geological profile
The vines of this plot thrive on rock with very red clay soil and fossiliferous rocks. Ideally exposed on the southern slope of the Combe Lavaut, the vines of Lavaut-Saint-Jacques see the rocks of the middle Jurassic emerge, warmed by the midday sun. The supremacy of Gevrey-Chambertin wine also owes to the cool currents that descend from the combe in the wake of glacial waters.

The winemaking process involves aging the wines in a combination of oak barrels and concrete or stainless steel tanks.
