GEVREY-CHAMBERTIN
Aux Echezeaux
2019
- Description of the appellation
Located south of Dijon, the Gevrey-Chambertin appellation is the first village of the Côte de Nuits. It was by royal decree of Louis Philippe in 1847 that the term Chambertin was associated with Gevrey to become officially known as Gevrey-Chambertin. The plot is located just below Clos des Ormes and to the south of the famous Charmes-Chambertin. The vines are planted on brown soil with an approximately 40% clay content, as well as lava and iron ore. The soils are less draining than those of the Premier Crus. However, this terroir reveals good typicity thanks to the presence of limestone.
- Etymology
With the deformation of "Les Chesaux" combined with a bad cut, the name "Échesaux" well spelled, emerged. Ultimately, "Aux Échezeaux" prevailed in Gevrey. This qualifier comes from the Latin word "Casellum" which means secondary habitations built on a domain.
- Vinification & Aging
Biodynamie... At each stage, all our work follows the rhythm of the Moon’s synodic revolution...
Our vines are cultivated according to the philosophical principles of the Biodynamic culture…
Aging our wines in a combination of terracotta and wood allows them to fully express the authenticity of their Climat.
- Food & Wine Pairing
This Gevrey-Chambertin would pair well with a leg of lamb or a grilled duck breast.
